EXECUTIVE CHEF DANIEL BLAKEMAN
With 30 years of culinary expertise, Chef Daniel Blakeman's passion for food was ignited during his exclusive apprenticeship at Neil Perry's iconic Rockpool in Sydney. He's driven by a love for punchy yet delicate flavours, masterfully blending bold ingredients with subtle nuances. Fusion cuisine is his playground, where global flavours meet creative twists. Daniel's culinary journey has taken him to world-class resorts in the Bahamas and America. In 2009, he and Co-Owner Jennifer Lee launched successful catering ventures in Sydney and Queensland. After establishing The Bikini Tree on Magnetic Island, which became a beloved destination, Daniel and Jennifer wanted to share their passion with an even wider audience. This led to the opening of Saltwater Restaurant, where they showcase the freshest seafood and premium meats sourced from Queensland and around Australia. Expect complex and interesting flavour profiles, crafted with precision and passion over an evening dinner.
